Mexican Chicken Casserole ~ Shopping List

Don’t be scared by the long list of ingredients. Many of them already reside in your pantry.

MEXICAN CHICKEN CASSEROLE

  • 2 ears cooked corn, or 2 cups frozen corn
  •  canola oil
  • 1 small onion
  • 3 garlic cloves
  • 1  16-ounce can fat free refried beans
  • 1  15.5-ounce can black beans, rinsed and drained
  • 4 cups chopped cooked chicken
  •  chili powder
  •  ground cumin
  •  cayenne pepper
  •  coarse salt
  • 8  6-inch flour tortillas
  • 1 jar salsa verde
  • 2 cups (one  8-ounce package) shredded sharp cheddar cheese
  • sour cream
  • 1 avocado or guacamole
