MEXICAN ORZO SALAD
- 2 cups dried orzo
- 1 red pepper
- 4 washed scallions
- 1 large Kirby cucumber or 1/3 English cucumber
- 2 ears fresh corn or 1 cup cooked corn (fresh is better!)
- 1/2 cup green olives
- 1 cup rinsed and drained cooked black beans – optional
- 2 lemons
- sherry vinegar
- ground cumin
- dried oregano
- coarse salt
- coarse black pepper
- cup olive oil
- chopped coriander or parsley
